
As the leaves start to turn golden and the air gets a little crisper, it’s officially eplekake season! Eplekake, the Norwegian apple cake, is a beloved dessert for all occasions, but it’s especially cherished in autumn when apples are in season.
In Norway, fall means apple picking season, and what better way to enjoy it than with a slice of warm eplekake? Whether you’re wrapped up in a blanket or soaking up the last bit of sunshine, this easy Norwegian eplekake recipe is the perfect way to celebrate the flavors of the season.
Delicious and Easy Norwegian Eplekake Recipe
Ingredients:
For the apple filling:
- 4 medium green apples (or 3 large ones)
- 3 tbsp sugar
- 2 tbsp cinnamon
For the cake batter:
- 200g butter
- 200g sugar
- 5 small eggs (or 4 large ones)
- 170g all-purpose flour (gluten-free works well, too)
- 1 tsp baking powder
Optional toppings:
- Chopped almonds
- Pearl sugar
To serve with:
- Vanilla ice cream
- Whipped cream
Instructions:
1. Preheat your oven to 180°C (350°F).
2. Peel and core the apples, then slice them into thin wedges. In a bowl, mix the apple slices with the sugar and cinnamon, and stir until they’re evenly coated.

3. In a separate bowl, cream the butter and sugar together using an electric mixer until it’s light and fluffy.
4. Add the eggs one by one, and mix well after each addition.
5. Sift the flour and baking powder into the bowl, then gently fold it into the wet ingredients using a spatula or spoon.

6. Line the bottom of a 20–22 cm springform pan with baking paper and grease the sides.
7. Pour half of the batter into the tin, then arrange a layer of apple slices in circles over the batter.
8. Pour the remaining batter on top, and repeat with the last of the apple slices.

9. (Optional) Sprinkle chopped almonds or pearl sugar on top of the batter before baking. I skipped this step because I made the recipe spontaneously and didn’t have any almonds or pearl sugar.
10. Bake for 50 minutes to 1 hour, or until a skewer inserted into the middle of the cake comes out clean.

11. Let the cake cool for at least 10 minutes before serving. Serve it warm with a scoop of vanilla ice cream or whipped cream. I went for vanilla ice cream. 😊
12. Make a cup of coffee or tea, light a candle, and enjoy your delicious Norwegian eplekake! 😋
